Restaurant style dosa / Crisp dosa

We usually order dosa in restaurant only because of its crispiness. The dosas  made in our homes are not that much crispy. So  I wanted to try crispy dosa . I googled the recipe  and  made it . It was super success.   Nowadays we are enjoying crispy dosa in home itself  and    I am making twice  in a month .  Do try this and suprise your loved ones with this super crispy dosa.










Here is the recipe...



Ingredients:


Boiled rice  -  2 cups

Raw rice  -  1/2 cup

Urad dal  -  1/2 cup

Thoor dal  -  1 tbsp

Chana dal -  1 tbsp

Fenugreek seeds  -  1 tsp

Sugar  -  1 tsp

Salt  - 1 tbsp

Oil - fro making dosas


 Method:


1. Soak all the ingredients except  salt and sugar  for 4 hours and grind it to the smooth batter. Then add salt and sugar  mix well with  your hands.  keep  it in the container for 8 hours for the batter to ferment.












2.  Heat the  tawa.   If you drizzle some water , 'ssshhh'  sound will come.  Now our tawa is ready . Reduce the flame  and pour one ladle of batter and spread it thinly.  Drizzle some oil and increase the flame.











3. If you spread the batter very thin . Don 't need to flip it  . The both sides will be cooked well. See the back side of the dosa in the below picture.  It will be browned.











4. Now our dosa is ready to serve.

Notes


  • Addind sugar gives nice brown colour to dosa.
  • The consistency of the batter is neither thick nor thin
  • If you spread the batter very thin , the both sides will be cooked  properly.
  • Everytime you finish making one dosa. Drizzle some water  on the tawa  and  make another one. this reduces  the overheating of tawa.
