I am a beginner in baking. I have tried cookies. But this is the first time I am trying eggless cake and the result was super good. December 3rd is our 1st wedding anniversary. I decided to give homemade cake as a surprise to my husband. So i bookmarked the recipe in the net and purchased the ingredients 1 week before itself right from the baking tray. I enjoyed the baking process also learnt few basics in baking. I will share the things which i learnt, in the future post.
Coming to the recipe... if you are a beginner follow the measurement as mentioned in the post without any changes. If you follow the instructions carefully, I am sure that you will get a wonderful vanilla cake.
Ingredients:
All purpose flour/ maida - 1 and 1/2 cup minus 3tbsp
Corn flour - 3 tbsp
Curd (thick) - 1 cup
Sugar - 3/4 cup
Oil - 1/2 cup
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Vanilla essence - 1/2 tsp
Method:
1. Sieve maida and corn flour to ensure even mixing. In a bowl mix sugar and curd.
2. Add baking powder and baking soda. Rest it for 2 - 3 mins. The mixture will be slightly frothy now. Then add oil and vanilla essence.
3. Preheat oven to 180 degree celcius. Add one tablespoon flour at a time to the above mixture.
4. Grease the baking pan with oil . Dust with a tsp of flour.
5.Pour the batter in the baking pan.
6. I used electric oven. You can bake either in electric or micro wave oven. Ensure the oven is in the convection mode.
7. Let be in oven for 30 - 40 mins. Mine took 35 mins for done. In order to check whether cake is baked or not, insert tooth pick in the center of the cake. if toothpick comes clean. Then cake is done.
8. Remove the pan from the oven. let it be cool for 5 mins . Invert the cake carefully in the wire rack.
Cut the cake in to pieces and enjoy with tea or coffee. If you want you can also frost the cake.
Chocolate frosting
Ingredients:
Butter - 1/4 cup
Coco powder - 1/3 cup
Milk - 1/6 cup
Icing sugar - 1 and 1/2cup
Vanilla essence - 1/2tsp
Method:
1. Melt butter in low flame. Add coco powder and stir well.
2. Then add icing sugar,milk and vanilla essence. Stir well until it reaches the spreading consistency.
3. Apply this frosting all over with cutlery knife decorate with sugar rice.
eggless vanilla cake with chocolate frosting is ready...
I also piped the cake.
Now the cake is ready for cutting :)
Note:
- You can replace the oil with butter. But i don't know about the texture of the cake if you are adding butter.
- Dont rest the batter for a long time after mixing the flour. Immediately keep in the oven.
- Baking powder and baking soda are different. So don't replace one with other.
- Preheating the oven in the convection mode is must.
- If you don't have icing sugar for frosting , powder the sugar and make use of it, but you have to make it as a very fine powder.
