Carrot beans poriyal

This poriyal looks so colourful. It is simple to make and goes well with Sambar and rasam. or you can have this with a plain rice topped with seasame oil.













Here is the recipe...





Ingredients:


Carrot  -  2

Beans 15- 20 nos.

Onion - 1

Mustard seeds -  1tsp

Grated coconut  -  3tbsp.

Oil - 1 tbsp

Chilli powder  -  3/4 tsp

Salt   -  as needed

Water  -  as needed


Method:


1. Finely chop the carrot, beans and onion. 

2.Heat the oil in the pan. Add mustard seeds after it splutters, add onion and fry till transparent.Then add chiili powder and salt. Fry for a minute.

3. Now add the chopped veggies, sprinkle some water. Cook covered in the medium flame.











4. Stir frequently. Ensure that the veggies doesn't stick to the pan. if its sticks, add some water again and allow it to boil. Also don't pour more water and make veggies to be over cooked.

5. Finally the water will be drained and veggies will be cooked. if you take veggies in hand  and press it , it will not be so hard. You can feel the tenderness. Now check for the salt and spice.

6.Add the grated coconut and stir for few minutes. Our beautiful and colorful poriyal is ready.



 Note:

  • You can also add handful of green peas  while adding carrot and beans.
