Bitter gourd paruppu usli(stir fry)

 I know most of you wont like bitter gourd.  But this veggie is good for our health. It has a capacity to kill the worms in our stomach. So at least once in a month you can add this veggie to your lunch. But this paruppu usli will  be awesome and the bitterness of the bitter gourd is reduced so much. I am sure that you will not feel that you are eating the bitter gourd. You can have  this paruppu usli with rice,  topped with seasame oil. Apalam will be great sidedish for rice and paruppu usli combo. It also goes with sambar and curd rice.




Here is the recipe...



Ingredients:


Bitter gourd (medium size)  -  1

Onion  -  1

Chana  dal  -  1/2 cup heaped

Mustard seeds  -  1tsp

Grated coconut - 3-4 tbsp

Chilli powder  -  1tsp

Turmeric powder  -  1/2 tsp

Tamarind  -  small gooseberry sized 

Salt  -  as needed

Oil  -  2 tbsp.

Water  -  as needed

Method:

1. Cut the bitter gourd as shown in the figure, remove seeds from it. and chop the onion.


     



2.Soak the chana dal  for 1  hour and grind it coarsely.


                


      






3.  In a pan  take a tamarind extract, add turmeric powder, allow it to boil and finally add bitter gourd . (the bitter gourd should be immersed in the tamarind water. So add enough water while extracting a tamarind.) Cook covered in the medium flame.After 15 - 20 mins, the water will be drained and bitter gourd will be cooked. collect the bitter gourd  in a plate.

   
                 









4. in a kadai , heat oil and add muster seeds, when it pops, add onion and fry till transparent.



         








5. Now add the grounded dal. cook in the low flame. Stir frequently in order to avoid the sticking of dal in the kadai. if its sticks, add teaspoon of oil and stir well.











6. Then add the cooked bitter gourd to the dal mixture and stir well for few minutes.












7. Finally add grated coconut and stir for a minute.












Bitter gourd paruppu usli is now ready to serve.






That day I made Bitter gourd paruppu usli, kollu thogayal,  puli kulambu, sambar. As my hubby doesn't take bitter gourd much  I also made channa dal sundal.
