Before marriage I have tried fried rice on my own . My family was also comfortable with my very own style. That days... I am not familiar with spring onions. And it is very rare to find in market at my place. So I avoided that veggie and usually make with cabbage , capsicum and carrot. Nowadays I am following this style... So without further delay, lets move to the recipe...
Here is the recipe...
Ingredients:
Basmati rice - 1 cup
Carrot (small) - 1 no.
Capsicum (small) - 1 no.
Cabbage - 1 cup
Spring onions - 6 -7 nos
Soya sauce - 1 tsp
Pepper powder - 1 1/2 tsp
Olive oil- 2 tbsp
Salt to taste
Water as needed
Method:
1. Soak Basmati rice for half an hour and cook with 1 and half cup of water. Separate the grains. Cut the veggies as thin strips. Separate the white and green part of spring onion. See the picture below.
2. Heat olive oil in a pan , add the white part of spring onion. Fry it in a high flame for 1 min.
3. Then add carrot , fry it for 1 min.
4. Then add cabbage , fry it for 1 min. then add capsicum fry it for 1 min.
5. Now add soya sauce , pepper powder and salt.
6. Add green part of spring onion and toss well.
7. Now add rice to it. Toss well.
And finally here is yummy fried rice...
My husband and me enjoyed a lot by having this fried rice with vegetable Manchurian...
So here is a virtual treat for you guys...
Notes:
- Olive oil works best.
- Cutting the veggies as thin strips is very important.
- The veggies should remain crunchy . So fry all the veggies for only one minute as mentioned in the method.
- Rice and water ratio depends upon the quality of basmati rice. If you soak the rice for 30 mins then 1 and half cup water is required for 1 cup of rice. if you don't soak then 2 cups of water is required.
