Vegetable paratha

 Vegetable paratha  is made with Wheat flour and veggies like Carrot  and onion.  This receipe requires no stuffing and very simple to prepare. I learnt this dish from my mom. In  busy mornings,  when I have no time to prepare side dish for chapathi, my  choice will be this. Just with pickle and curd you can have  a healthy breakfast . Or you can have this for a dinner too.










Here is the recipe...



Ingredients:


Wheat flour/ Atta - 1 cup heaped

Onion -  1 ( medium size)

Carrot - 1 (medium size)

Corriander leaves - 1/4 cup  finely chopped

Curry leaves - 4 sprigs

Chilli powder - 1 tsp

Turmeric powder - 1/4 tsp

Salt - as needed 

Water - as needed

Oil - 1 tbsp and for cooking parathas

Method:

1.  Take 1 cup of flour in a wide bowl. Chop onion, Coriander leaves and curry leaves and grate the carrot.




2. Add veggies to theflour also add salt , Turmeric powder and chill powder. Mix well with your hand. Add water little by little and gather in to soft pliable dough.





3.  Pinch  an equall sized ball out of a dough and roll it, but not very thin like chapathi.





4. Heat a pan , Drizzle oil , and cook the parathas on both sides in medium or in high flame till golden dots apper on it.




Our paratha is ready to serve now...




I served with curd and pickle. Even coconut chutney goes well.




Notes:

  • You can also add Drumstick leaves.
  • Don't add more onion than mentioned. If added  it will be difficult to roll the parathas.
  • Dont roll the parathas so thin.
