My mom usally makes gravy with Ridge gourd as a side dish for idly/ dosa. But this Ridge gourd chutney is new to me. I am bored of usal chutneys and wanted to try a new one. So searched the net and find this. My husband who don't like Ridge gourd ate this chutney without knowing it has ridge gourd in it and said " it is super" and asked the name of the chutney . (Any guess ? what I have said to him ) So why are u waiting? put your Aprons and make this chutney and please your family.
Ingredients:
Ridge gourd - 1 no
Onion - 1 no
Green chillies - 8 - 10 nos
Tamrind - marble sized
Salt - as needed
Water - as needed
Oil - 2 tsp
To Temper:
Mustard - 1/2 tsp
Urad dal - 1/2 tssp
Curry leaves - 1 sprig
Asafoetida - 1/4 tsp
Oil - 1 tsp
Method:
1. Chop the onions roughly. Peel the skin of Ridge gourd and cut in to squares. In a pan Heat oil. Add onion and Greenchillies.
2. Fry them till onion turns transparent. Now add Ridge gourd and fry them in a medium flame till it reduces in volume.
3. Now cool them and grind it by adding Tamrind, salt and little water. Temper it with the items given under "To Temper" in the ingredients list.
Serve it with idly or dosa. I said it is Green chutney to my husband, when he asked the name of the chutney.
Notes:
- Depending upon the spiciness of your chilli you can reduce or increase the amount of chilli. But minimum 8 nos is required (if spcice level of the chilli is moderate) to make a tasty chutney.
- Asafoetida is a main ingredient. So pleade add it for the nice flavour of the chutney.
