Rasam with freshly grounded spices

 This is  a South indian recipe.  Generally we prepare rasam in our everyday  lunch menu. We always  prepare rasam powder in large quantity  and store it in  a airtight container in advance . So it will be handy for us while preparing rasam during lunch. But here I am sharing rasam with freshly grounded spices. It can be prepared within minutes . All you need is some spices and few minutes to spare in kitchen. If you run out of Rasam powder. Dont worry .  Follow this simple recipe. It can be made in a  jiffy.  Enjoy  piping hot rasam with rice.









Ingredients:


Tamrind -  small gooseberry sized

Tomato - 1  no . small sized

Garlic  - 2 pieces

Coriander leaves - 1 tbsp choped

Oil - 1 tsp

Water -  as needed

Salt - as needed


To grind:


Black pepper - 2tsp

Jeera - 1 tsp

Coriander seeds / dhaniya - 4 tbsp

Red chillies - 5 nos


Method:


 1. Soak tamrind in a warm water and extract the juice from it.




2.  Grind the ingredients listed under " to grind"   without roasting it. Grind coarsely. 




3. Heat a  oil in a pan , splutter mustard seeds,  then add jeera . let it pops. Now add  tamrind water, grounded  spice powder  and Stir well.



4. Grind tomato and garlic in a mixer. Add this grinded tomato and garlic mixture to the  rasam. Also add turmeric powder and  salt.  When it  is  frothy . Switch off the stove and garnish with coriander leaves.




Now  Steaming rasam is ready...




Enjoy piping hot rasam with rice.



Notes:

  • Dont grind the  spices finely. Roasting the spices is not required. But if you prefer you can roast the spices before grinding it.

  • You  can also  cube the tomatoes and crush the garlic  instead of grinding it.  But add it during temperng itself.

  • You can also slit  a green chilli and add during tempering . This gives  nice flavour for the rasam.

  • Dont forget to add coriander leaves in the end . It gives nice aroma.
