Poori and potato masala is a classic combo! I have tried many kurmas to be paired with poori but this is the best combo i would say. My husband is a great fan of poori masala. He enjoys every bite of poori with this masala. I sit near him and watch his happpy face :) That gives me greatest joy in the world. ok.. enough of my stories. lets go in to the recipe...
Ingredients:
Potato - 5 nos
Onion - 1 no
Tomato- 1 no
Greenchillies - 4 -5 nos
Coriander leaves - 1/4 cup
Curry leaves - 1 sprig
Ginger - 2 tbsp (finely chopped)
Mustard - 1 tsp
Hing - 1/8 tsp
Turmeric powder - 1/4 tsp
Oil - 2 tbsp
Water - 3/4 - 1 cup
Salt - as needed

Method:
1. Peel the potatoes and cut it to pieces . Pressure cook it by adding little water. Slice the onions. Cube the tomatoes. Slit the green chillies. Finely chop coriander leaves and ginger.
2. Heat 2 tbsp of oil in a pan , add mustard, when it splutter add chopped ginger and hing.
3. Add sliced onion , curry leaves and green chillies. Fry it till onion gets transparent. Then add cubed tomato and fry it till it shrinks in volume.
4. Now add water ,salt and turmeric powder. I forgot to add turmeric at this stage and added later. Allow it to boil.
5. Once you pressure cook the potatoes, mash it with a potato masher.
6. Add mashed potatoes to the boiling water. Stir well. Check for salt and spice levels. Give a quick boil.
7. Finally add chopped coriander leaves and switch off the stove.
Our poori masala is ready now...

Notes:
- You can also skip tomato
- You can also add tsp of urad dal and 1 tbsp of chana dal while tempering
- You can also add half tsp of chilli powder by skipping 2 green chillies.
- If your potato masala is wattery, then you can add tbsp of besan flour mixed with 2 tbsp of water in a final stage and give quick boil. this gives thick consistency and nice texture to the poato masala.
