Chidambaram Gosthu/ Brinjal Gosthu/ Side dish for Idly/dosa

  This is  a gosthu made with brinjal, also known as Chidambaram gosthu. It is my Mom's version. It is a perfect sidedish for idly. It tastes tangy and spicy.  Even my sister who hate brinjals, likes this gosthu. So any brinjal haters in your family will love this for sure.  Try this and relish this gosthu with hot idlies.





Ingredients:


Brinjal - 4 -5 nos.  or 1/2 of Aubergine

Tomato - 1

Onion - 1

Tamrind -  medium Gooseberry sized

Turmeric powder - 1/4 tsp

Mustard - 1 tsp

Urad dal - 2tsp

Chana dal - 4 tsp

Redchillies - 4- 6 no

Curry leaves - 1 sprig

Salt - as needed

Water as needed

Oil - 1 tbsp

To roast and grind:


Chana dal - 1 tsp

Coriander seeds - 1 tbsp

Red chillies - 2 - 4 no

Oil - 1 tsp


Method:


1. Soak tamrind in warm water and extract the juice . Roughly Chop brinjal and toamto. In  a pan Add brinjal, tomato , turmeric powder, salt, tamrind juice  and cook  it  till brinjal softens. After brinjal gets cooked , mash it with a ladle or grind it coarsely.



2. In  a pan heat oil, add mustard. When it pops, add Chana dal and urad dal, fry it till golden brown . Now  add redchillies and curry leaves . Toss well. Then add chopped onion and fry it  till onoinon turns transparent.  Now add grinded brinjal to it. Stir well.



3.  In a  small pan heat tsp of oil, add chana dal roast it till golden brown. Then add coriander seeds  fry for a minute. then add redchillies and fry them till golden spots appear on it.  Grind the roasted items  to a fine powder




4. Add the grinded powder to the gosthu and boil it for 3 - 4 minutes . Check for salt and transfer it to the serving bowl.



Our chidambaram gosthu is ready !




Don't forget to top with sesame oil while serving...



Notes:


  • You can also add 1/4 tsp of fenugreek and 1/4 sp of hing while tempering.
  • The gravy should be thick. So adjust water acordingly.
