Uthapam is the thick dosa topped with veggies. My dad likes onion uthapam much. But my mom prepares this occasionally.My mom is keen in making different types of dosa like Ragi dosa, kambu dosa, chola dosa, keerai dosa, venthaya dosa...(Health conscious) Once in a blue moon she makes uthapam. My dad likes the uthapam which is made in kadai than the one which is made in dosa tawa.Uthapam made in kadai have a enriched taste than the tawa uthapam.
I heard of onion uthapam only but when i was surfing the net i found this vegetable uthapam. it looks colorful and appealing. So wanted to try that . wow!!!! it came so nice. I was very happy to see the texture and attractive color of uthapam.
Here is the uthapam recipe... There is no specific measurement for the batter. Make the batter as mentioned in idli recipe. Refrigerate it. The next day it will be ready for making uthapam. Take 5-6 ladle full of batter from that for making uthapam.
Ingredients:
Idli/ dosa batter - 5-6 ladles
Onion - 2
Tomato - 2
Green chillies - 6 nos
Coriander leaves - fistful
Idli milagai podi - 6 tsp
Method
1. Chop the onions , tomato, Green chillies and coriander leaves
2. Heat the dosa tawa, preferably iron skillet. when it gets heated pour the half ladle batter and make it as thick dosa. You can make 4 - 5 mini dosas at the time. Top the veggies over the dosa .Drizzle the oil over the dosa.
3. Flip the dosa and cook in the medium flame till it turns to golden brown.
4. I also topped the dosa by combining the veggies.
Our uthapam is ready.. here is the colourful uthapam to tempt you...

Note:
- Make the dosa thick, then only the uthapam will be softer.
- The veggies for topping is purely your choice. You can also make yellow, red ,green capsicum topping.
