Eggless vanilla cup cake with choco chips/ Eggless vanilla muffins

Today i am with an interesting post. Ya its Eggless vanilla cup cake with choco chips. For past 4  days i was busy with preparations for my husband's birthday celebrations. Finally we celebrated yesterday with lot of  joy and fun. So as our  celebrations were over , I thought of blogging today. 
     Coming to the recipe, Baking is not a difficult if you follow some basics and some tips & tricks. You have to be accurate in measuring the ingredients and setting the temperature and timing of the oven.







My husband  likes cup cakes very much. So whenever we visit  grocery store, he grabs one packet of cupcake and happily have that during evening tea time. But  i felt that cupcakes were  eggy and wanted to bake  a cupcake without eggs to treat my man.  Finally one fine day i bake it and it was super duper hit. He loved that  very much.  Sure it will be a keeper. Believe me! if you follow the measurements and methods  exactly ,without any changes you will get super tasty and spongy beautiful cupcakes.



I didn't do any frosting as me and my husband like to have this way. if you want you  can do frosting.The outer part is crisp and inner part is spongy. Definetly Your kids would fall in love with this cute cupcakes. Go ahead  and  treat your loved ones with homemade eggless cupcakes.

Here is the recipe...



Ingredients:


All purpose flour/ Maida -  1 and 1/2 cup

Cornflour - 1 tsp

Butter - 1/4 cup

Sugar - 3/4 cup

Milk - 3/4 cup

Vanilla essence - 1 tsp

Salt - 1/4 tsp (if using unsalted butter)

Baking powder - 1 tsp

Choco chips - 2 tbsp




Method:

1. Sift the all purpose flour, corn flour, baking powder and salt  alteast twice to ensure even mixing. Keep the flour mixture aside. 


2. In a wide bowl  take butter(at room temperature) and sugar. Whisk it with electric beater/ egg beater  till it is creamy and sugar completely dissolves.



3. Now add milk and vanilla essence and beat it again till everything get mixed well.




4. Now add the flour mixture and gently mix with spatula. Don't apply too much pressure.


5. Now add 1.5 tbsp of choco chips. Reserve 1/2 tbsp for garnishing.  Mix it gently . Line the cupcake / muffins mould with cup cake liners and spoon the mixture to fill 3/4 th of cup cake  pan. garnish each cupcake wih reserved choco chips.


6. Preheat the oven at 180 degree celcius at convection mode and bake it  for 25 - 30 mins or untill tooth pick  is inserted and comes out clean. The top will turn golden brown colour and it will be crispy.




7. Allow it to cool  completely  for 10 mins in a wire rack and enjoy your cupcakes.



Now our  delicious cup cake is ready :)


You can do frosting on each cup cake if you like.



Enjoy it  with cup of  hot tea / coffee :)

Notes:

  • You can substitute all purpose flour with cake flour. In that case, you don't need to add  corn flour.

  • Adding choco chips is purely your choice. I made some cupcakes without choco chips also.

  • The cupcake will rise up in first 15 mins itself. In next 15 mins, the top layer will turn golden brown and crispy.

  • If you are making frosting , then reduce sugar either in cake or in frosting.

  • Dont open the oven door frequently, it will make cup cake to sink in middle.

  • Gently fold the mixture after adding flour. If you apply pressure or over do then cup cake will develop cracks.
