Ridge gourd gosthu/ Peerkangai gosthu/ Side dish for idly/ dosa

My Mom makes this ridge gourd gosthu as a sidedish  for Chola dosa , Kambu dosa and idly.
This is  just  a change to our regular chutneys and sambhars.  Its very easy to prepare . During busy mornings, within no time you can prepare this spicy gosthu.












Here is the recipe...



Ingredients:


Ridge gourd/ Peerkangai - 1 no

Tomato - 1 no

Onion - 1 no

Greenchillies - 4 nos

Turmeric powder - 1/4 tsp

Mustard - 1 tsp

Urad dal - 2 tsp

Hing - a pinch

Curry leaves - 1 sprig

Oil -  2 tsp

Salt- as needed

Water- 1/4 cup

Method:

1. Peel the skin of ridge gourd and chop it . cube the tomato.


2. Take   Chopped Ridge gourd, tomato and greenchiilies in a  pressure cooker, add little  water and turmeric powder in to it. Pressure cook for one whistle.



3. Allow it to cool and grind them to a coarsely.



4. In a pan, heat oil and add mustard, when it pops , add urad dal  and fry it till  golden brown. Now add choped onion and fry it till it turns transparent. Add  hing and curry leaves.Finally add 1/4 cup of water   to it and bring it to boil.



5. Now add coarsely grinded ridge gourd paste to it . Add some salt to taste. Stir it and give a quick boil  ans serve hot .



Now our Ridge gourd gosthu is ready!



Serve with steaming idlies or  crispy dosas :)



Notes:

  • The gosthu should be in pouring consistency, So adjust water accordingly.
  • Grinding   coarsely  gives nice texture   and taste to the gosthu. So don't grind finely.
  • One whistle is enough for cooking veggies . So don't give more than one whistle while pressure cooking.
