Its my mom's staple recipe. when i was taking to her through phone, i told her that i bought ridge gourd , but i don't know to make a recipe in that. she immediately replied " you can make a stir fry in that and it is very simple".Then she told the recipe, without any changes i followed her recipe. Outcome is: Simple and superb accompaniment for steamed rice. me and my hubby loved this stir fry and enjoyed with hot rice and sambar
Here is the recipe..
Ingredients:
Ridge gourd - 1
Onion - 1
Tomato - 1
Mustard seeds - 1 tsp
Urad dal - 1 tsp
Curry leaves - 1 sprig
Chilli powder - 1 tsp
Turmeric powder - 1/2 tsp
Salt - as needed
Coconut (grated) - 2tbsp
Rice flour - 1tbsp
Oil - 1 tbsp
Method:
1. Peel the skin of the Ridge gourd and cut in to bit size pieces. Chop the onion and tomato.
2. Heat oil in the pan, add mustard seeds, when it pops add urad dal and fry till golden brown.Then add onion and fry till it turns transparent.
3. Now add chillipowde, salt and turmeric powder and stir well.
4. Then add ridge gourd pieces to the mixture.
5. Cook covered in the medium flame for 10 - 15 mins. Don't add water. The vegetable itself will release some water and it will be cooked in that water itself.
6. When it get cooked add grated coconut and stir well for a minutes.
7. Finally add 1 tbsp of rice flour. It will give semi solid texture to the poriyal. Stir well for 2 - 3 minutes and remove from the flame.
Now our Peerkangai poriyal is ready to serve...
Enjoy with hot rice topped with a tsp of coconut oil ...
Note:
- If you don't have rice flour , you can skip that. taste will not vary much.
